How do I know if an arrangement is the right level?
When in doubt:
print out free (or inexpensive) sheet music, bring it to your lesson, and let's talk about it!
Generally, it is best to select arrangements that are easier.
An arrangement is likely easy if:

It has fewer notes and less black ink on the page, especially for piano arrangements.

It has a small range (notes mostly in the middle of the staff, not many notes that are above or below the staff).

It has no flats or sharps in the key signature (if for piano), has 1-4 sharps (for violin), or 0-3 sharps (for viola).

It comes with note names already written in (although this is not an absolute necessity).
Piano

Hal Leonard: Super Easy Songbook Series. This series has 56 different collections of arrangements of familiar songs, from Disney to the Beatles to Taylor Swift.

Hal Leonard: Easy Piano Songbook Series. This series is similar to the Super Easy Songbook Series in content, but more appropriate for adult students or intermediate-advanced children.

The Legend of Zelda for Easy Piano. This book has 33 different tracks from Zelda games spanning chronologically from The Adventure of Link (1987) up to Tri-Force Heroes (2015).

Faber – Piano Adventures, Primer Level: Popular Repertoire. This book includes the Star Wars Main Theme and The Lion Sleeps Tonight in arrangements that are accessible to young children learning the My First Piano Adventures series.

Faber – PreTime Piano Books. These books have more arrangements of familiar songs for young children.

Hal Leonard 5-Finger Piano Songbook: Star Wars. Here is another good option for easy John Williams arrangements.

Michael Kravchuk – Easy Hymn Arrangements. This is an extensive collection of arranged hymns by Michael Kravchuk, all possible to download and print for free.

Studio Ghibli Easy Songbook. This book has 75 arrangements of different songs from Studio Ghibli movies, and is accessible to students in the Faber My First Piano Adventures series.

Studio Ghibli Songbook. This book has 15 arrangements of different songs from Studio Ghibli movies. The arrangements themselves are about Faber Levels 1-3 in difficulty, but can be adapted for younger children as well.

Popular Anime Songs for Piano Solo. This book is an excellent collection of 68 arrangements for beginning students.

Violin

Hal Leonard: First 50 Songs You Should Play on the Violin. This book includes selections from film scores, folk tunes, and pop/rock songs. Most arrangements are at a Suzuki book 1-3 level.

Edward Huws Jones – The Ceilidh Collection. This is a comprehensive book of Celtic fiddle music, with a CD included.

Fiddlerman – Free Sheet Music. This website has easy arrangements of folk songs, pop music, classic rock, movie and video game soundtracks, and more.

Michael Kravchuk – Free Fiddle Sheet Music. This is a substantial collection of fiddle songs of a variety of levels.

The Best of the Beatles for Violin. This book has 92 songs in easy arrangements for solo violin.

Mark O'Connor Method – Violin Book 1. Mark O'Connor's violin method books are a highly-acclaimed new fiddle method book series, akin to Suzuki but for folk music. These books tend to be expensive, but valuable for students who are passionate about playing fiddle music.

Neil Rossi – Learning to Fiddle, Bluegrass Style. This is an excellent book for students in Suzuki books 1-5.

Chip Cohen – Tall Tales and Twin Fiddles: 21 Old Time Fiddle Duets. This book is recommended for students in Suzuki books 1-3.​

Studio Ghibli Songs for Violin and Piano. These 8 arrangements can be adapted for most beginning students.

Studio Ghibli Collection. This book includes 25 arrangements and a CD. Most arrangements can likely be adapted for beginning students.
Viola

Hal Leonard: Pop Viola. This search page has 97 different options for viola songbooks of a variety of levels. Most songbooks are adaptable to beginning students in Suzuki books 1-3.

Violaman – Free sheet music for viola. This website has a large quantity of free arrangements of fiddle tunes, pop songs, movie soundtracks, and more for solo viola. The arrangements are of a variety of levels of difficulty, but many are Suzuki book 1-2 level.

Hal Leonard: Easy Pop Melodies for Viola. This book has 50 arrangements, mostly at a Suzuki book 1 level.

Hal Leonard: 50 Pop Songs for Kids, for Viola. This book is somewhat more difficult, but most songs are still at a Suzuki books 1-2 level.
